It may be pancake day but I believe waffles are okay too! Especially when they are my Red Velvet Powered Up Waffles.

The recipe below is my own interpretation of Epicure’s Classic Waffles which can be found here.  I have changed it up a little to match the mood I was in when I made these for my “Treat Myself Like a Queen Day.”

First off, I have only started making waffles in the last 6 months. There is no way I have room for a proper waffle maker. My cupboards are full! The Epicure waffle mould is so easy to clean, and store. I wouldn’t have it in my house otherwise.

The recipe below makes four thick waffles or 6 skinny waffles. I like my waffles thick. They are more dreamy that way.

Recipe Time

Preheat your oven to 425F. (Yes, Epicure’s silicone mould can go into the oven up to 425F, crazy awesome)!!!

Combine dry ingredients

Dig a well in the middle of the dry ingredients.

Pour egg into the well, whisk with a fork.

Add vanilla, milk, and oil. Wisk together with the egg.

Then slowly blend in the dry ingredients, until combined

Place Silicone Waffle Mold on a baking sheet.

Pour mixture into all 6 moulds for thin waffles or use only 4 for extra fluffy waffles.

Bake 10-15 minutes, or until golden.

When cool to touch, flip out waffles.

Red Velvet Powered Up Waffles

Add fruit, cream, syrup, or all three for maximum waffle indulgence. Yum. This is my go-to recipe when I feel like spoiling myself a little.
