St. Patrick Inspires
Two things are happening in my world this week. I am getting back on track with meal planning by taking part in the Epicure 28-day challenge. And Friday is St. Patrick’s Day! When I was a wee lass in my twenties I celebrated this day like most, with green beer and more green beer. This time around I will be celebrating it by sharing my eating clean with green recipes.
Eating Clean with Green
Even though I planned my meals on Sunday, there were a few things I put on the list that I had not tried before. Like my broccoli bliss soup.
I had only used the broccoli bliss just once before when I added it to my kid’s mac and cheese. Being that he is a veggie monster, he absolutely loved it.
Broccoli Bliss Soup
Today I decided to experiment a little. I used the veggie garden mix, along with some other Epicure ingredients to make my own broccoli bliss soup.
1 small chicken breast cut into small pieces (saute in pan first with one 1/2 Tbls of oil)
2 Tbsp of Garden Veggie dip mix
1/2 tsp of Epicure Sea Salt
1 tsp of Epicure Pepper
1/2 tsp Epicure Garlic Aioli
1/2 tsp Epicure French Onion dip mix
2 heaping tsp Epicure Vegetable Broth
2 cups of water
Bring all this to a boil then add
A big sprinkle of Broccoli Bliss for extra vitamins and minerals (you can only get Broccoli Bliss this month only through the customer exclusive)
Last but not least, I added about this much broccoli. I put it in my awesome Epicure steamer (2 minutes in the microwave). Puree before adding it to the soup.
Turn heat down to medium-low and let simmer for 10 minutes
I was pleased with how it turned out for my first time. It was very filling and when I sipped away at lunch my coworker’s said it smelled delicious. From start to finish this only took twenty minutes. I poured it in my thermos and away I went.
Stay tuned all week for more Eating Clean with Green. St. Patrick may not approve of all this healthy stuff but by eating well all week, I won’t feel so guilty about the green beer I will no doubt have on Friday!!!
