Cake for Breakfast!!!
Ok, if you want the long story as to why I love Epicure, follow this link. But the shorter version comes in the form of cake, breakfast cake that is.
When Epicure launched it’s 2017 season I was completely over the moon. The new Asian flavours they were offering up had me stocking up on low-fat coconut milk. But that wasn’t even the best part. When I turned to page 52 of their catalog and saw a recipe for breakfast cake I knew I would never go back.
I recently played with the recipe a little and felt the need to share. It is so absolutely delicious that I just knew others needed to have this in their lives as well.
1/2 tsp Baking Powder (side note, I used the Epicure baking powder for the first time and my cake rose much higher than before. It is also aluminium free. And for my British friends, it is aluminium free.)
1 scoop Cocoa Acai Smoothie Booster
1 tsp Red Velvet Sweet Dip Mix
2 Tbsp low fat milk or skim
1/3 cup Quick Oats
6 frozen cherries chopped
I mixed everything together in my large soup mug, I put it in the microwave on high for 5 minutes then let it cool.
I mixed up the Coconut Lime sweet dip mix with the low-fat greek coconut yogurt and spread it in the middle of the cake and on top with a few sprinkles of 70% cocoa mini chips.
